Spanish saffron is an exclusive spice with a complex aroma, a warm golden colour and a distinctive flavour that adds both depth and visual appeal to a dish. Saffron consists of the dried stigmas of the Crocus sativus flower. Each flower produces only a few threads, which are harvested and handled with great care.
Its concentrated flavour means that only a small quantity is needed. The threads can be steeped in a little warm water, stock or milk before use, allowing the colour and aroma to spread evenly throughout the dish.
Saffron is particularly associated with classic Spanish dishes such as paella, but it is also used in rice dishes, soups, sauces, fish, seafood, bread, desserts and confectionery. It offers an aromatic profile with lightly floral, honeyed and earthy notes.

Saffron is classified under ISO 3632 into categories based on factors including colouring strength, aroma, flavour intensity, purity and moisture content. Quality is assessed through laboratory testing. The main compounds analysed are crocin, which is associated with colouring strength; picrocrocin, which contributes to flavour; and safranal, which is linked to aroma. Moisture content, purity and the presence of foreign matter are also evaluated.
Category I is the highest of the traditional categories, followed by Categories II and III.
